Peanut Butter Chocolate Chip Cookies

Yummiest Peanut Butter Chocolate Chip Cookies

I came across this recipe at canarygirl.com and immediately fell in love. She recommends doubling the recipe. I did not. The first time. I made them again, like, two days later, and doubled the recipe as instructed.

Also, go out right now and buy a gallon of milk. Seriously, you are going to need it.

Cream butter and sugars until creamy, then add egg and vanilla and beat until smooth.
Add in the egg and get your daughter to mix it in well.
Then add in the peanut butter. The Girl was not going to until I told her the 17 cookies she ate the day before contained peanut butter. I'm not sure she believed me.
Slowly mix in the flour, baking powder and salt.
Add in the chocolate chips. Somewhere in here, you absolutely MUST sample. Quality control, you know. This is actually why I will forever more double the recipe. I could make an entire meal out of this cookie dough. I know, I know, it contains a raw egg. I flaunt my immune system in the face of raw eggs....don't tell my Nana.
Bake at 350 for about 10 minutes and enjoy.

NOTE: It is important that you let these cookies cool on the pan for a few minutes, otherwise, they crumble into ice cream topping. Which, come to think of it, isn't that bad.Should you have an attention span similar to mine (I hate waiting for cookies to bake), you can save some cookie dough for later. This is also assuming you haven't already eaten all the cookie dough. Simply spoon dough onto a pan lined with waxed paper and put this in the freezer for a couple hours.When the drops are at least semisolid, add them into a plastic freezer bag. This is a great thing if you suddenly have a craving for cookies or you daughter charges in with 3 friends who are "starving".

Yummiest Peanut Butter Chocolate Chip Cookies
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
3/4 cup peanut butter
1 cup flour
1 teaspoon baking powder
a pinch of salt
1 cup chocolate chips
Preheat oven to 375ºF .
Line a cookie sheet or two with parchment.
Cream butter and sugars until creamy, then add egg and vanilla and beat until smooth.
Add Peanut butter and continue to beat until combined.
Add flour, baking powder and salt and stir to combine.
Add chips and stir again.
Drop small spoonfuls of dough onto parchment.
Bake 12 minutes or until just golden. Cool on pan for a few minutes.
